Rusk salad (Not for diet!)

Following my trip to Crete I decided to present to you an easy and different "salad". The good thing about this is that it uses very simple ingredients and produces very tasty results! I am giving you the base so feel free to add or change according to your taste.

Ingredients for 4 people:

Barley Rusks (400 gr)
4 Large tomatoes grated - use your mixer! (You can also use canned tomato juice but it won't compare  to the fresh ones!)
Olive Oil - about half cup
Oregano
Soft Goat Cheese eg. Feta cheese or if you are from Cyprus Anari cheese salted.

How to:

1. In a bowl add the rusks. They should be in large chunks. Add the olive oil and stir so they are all wet.








2. Add the grated tomatoes and the oregano.





3. Add the cheese. Use a fork to cut it into smaller pieces.






Enjoy!

Tip: For summer use cold tomatoes and cheese to make it more refreshing!
